Dominic's Cheesecake

Ingredients :

150g digestive biscuits (mcvites)

50g butter (unsalted)

2x250g mascarpone (tubs)

200ml creme fraiche (tub)

2x egg yolks

100g castor sugar

2x tbspn cornflour

75g sultanas

Method :

1, HEAT OVEN TO 190 (GAS 5)

2, Put the biscuits in a freezer bag and crush with a rolling pin until just crumbs

3, Melt butter and mix with biscuit crumbs and press into an 8 inch spring loaded cake tin and put in the freezer while you do the rest of the stuff

4, Mix the mascarpone / creme fraiche / egg yolks / castor sugar and cornflour with an electric mixer until well blended

5, Fold in sultanas and lemon rind and spoon mixture over the biscuit base and smooth off

6, Put in oven for 40 mins (on a baking sheet coz sometimes the butter drips out of the base)

7, allow to cool at the same rate as the oven because it sometimes cracks otherwise......so just turn oven off , open door and extend the tray its on and just leave to cool for a while (hopefully the baking sheet will have caught any butter drips).........
