Glenn's Norf London Chicken Curry

Ingredients

1 Onion
1 Courgette ( check spelling)
1 Pepper red or yellow
small pack of red chilies
jar of curry paste
1 tin of tomatoes
basmati rice
chicken breasts or thighs

Recipe

  1. Chop up chicken and put in dish with half the curry
    paste and put in fridge for min half hour.
  2. Put dash of oil in pan heat up and add chopped onion.
    Cook for a few minutes then add rest of chopped
    vegetables. Cook until tender, about 5 - 10 min's.
  3. Add tin of Tomatoes and stir. Brown the chicken in batches
    and add to pan with curry base. Cook on hob for about
    30 min's until chicken is done. Don't over cook chicken
    or it will be too hard.
  4. Cook basmati rice about 5 - 10 min's before curry is
    finished. Then serve.
  5. A couple of nice touches are to add fresh coriander
    just before serving and cook up some sweet potatoes
    and chop into cubes and stir into curry at end.
